Luigi Caccamo’s ‘Nduja requires nothing more than fresh pork, fine chili pepper, sea salt, and time. The generous use of chili pepper, a natural antiseptic and antioxidant, eliminates the need for preservatives. That’s why we use no colorants, additives, nitrites or nitrates, gluten, or dairy derivatives.
